Perched directly across the road from beautiful Cottesloe Beach in Perth, C Blu Restaurant is not just a popular eatery for locals, it’s also a boutique accommodation venue for tourists. An iconic landmark with floor-to-ceiling windows, the restaurant boasts magnificent ocean views and a constantly welcoming atmosphere, both enormous drawcards for guests. Offering enticing daily deals on lunches and dinners and featuring classic steak and seafood dishes, the restaurant is often brimming with enthusiastic guests looking for an enjoyable meal with a refreshing drink.

Challenge

When C Blu’s Executive Chef, Surin Balaraman was tasked with the job of creating a more functional kitchen, a number of considerations came into play. The old setup utilised a combination of commercial and domestic grade equipment that was underperforming and certainly less than ideal.

 

Located facing westward towards the ocean, the building attracts and retains a great deal of heat. Staff have endured a hotter kitchen environment at C Blu than what would exist in most restaurants. Surin was looking for equipment that would be able to maintain stable temperatures and perform reliably in the challenging conditions.

 

And finally, with bench space at a premium, it was important that any new equipment would serve a dual purpose. It should perform as an extra surface for food prep, in addition to refrigerated storage.

 

Solution

Through consultation with Stanlee Hospitality Supplies, Surin was offered options from several different brands to fit the kitchen’s specs but Stanlee particularly recommended Bromic. They advised that regular feedback from their customers who use Bromic products in commercial kitchens was that they perform well in high ambient temperatures, and Bromic can be relied upon for fast and responsive service if needed. C Blu purchased the following products:

 

  • PP1700 – a two door pizza prep fridge offering three functions in the one cabinet. It provides temperature control and hygiene through lidded, refrigerated ingredient pans on top. It also features a flat, stainless steel work surface with an extra-wide removable cutting board, and under bench fridges for ingredients storage.

 

  • UBC1795SD-NR – 3 door under bench storage fridge was purchased for its compact size and flat top, ideal for use as another additional working surface.

 

  • UC0650SD-NR – single door stainless steel upright storage fridge was chosen for its small footprint and generous 650L of internal space to store dairy, meat and other ingredients.

 

The result is a far more efficient and functional kitchen and a happier, more comfortable and productive team!

Our kitchen is very hot when it comes to room temperature during service. Bromic equipment was recommended because of its ability to maintain food-safe temperatures in hot kitchen environments like ours. Now we can focus on what we do best – serving delicious food to our customers – what confidence that our fridges will keep our ingredients at correct, safe temperatures.
